This is my 2nd version of Graham de Leche. Here are the ingredients: Caramel: - 2 tbsps white sugar Flan: - 10 large egg yolks - 300 ml condensed milk - 370 ml evaporated milk - 1 whole lemon rind Graham Float: - Graham crackers - 2 x 250 ml chilled all purpose cream - 300 ml condensed milk Procedure: 1. In a llanera, caramelize 2 tbsps white sugar over low fire. Set aside and let it cool. 2. Combine all ingredients listed under 'Flan'. Mix well then strain 3 times. 3. Fill the llanera with 1 cup of flan mixture then cover with plastic or foil. 4. Steam for 45 minutes. Set aside and let it cool. 5. In a separate bowl, whisk 2 boxes of chilled all purpose cream. 6. Gradually add 1 can condensed milk, whisk until volume gets doubled. 7. In a tub, arrange the graham crackers dipped into the fresh milk. 8. Layer with cream mixture, graham crackers and lastly cream mixture. 9. Top with leche flan. Add a little cream mixture on the side. 10. Chill. *Yield - 5 medium size llanera Thanks for watching.
