Ingredients: Dry: - 2 cups dessicated coconut - 1/2 cup all purpose flour - 1 cup sugar - 2 tsps baking powder Wet: - 3 eggs - 1/4 cup melted butter - 1 tsp vanilla extract Procedure: 1. Mix all dry ingredients. Set aside. 2. Mix all wet ingredients. Combine with the dry ingredients. 3. Mix well until well combined. 4. Transfer to cupcake liners. I used big ones but you may also use small liners like the one I used on my first version. 5. Bake in a preheated oven at 180° C for 25 minutes or until toothpick inserted comes out clean. I like the top part to be toasted so I baked the first batch a little longer than the 2nd batch to show you the difference. 6. Let it cool before serving. Thanks for watching.
